- 3 small zucchini (OR cucumber), sliced with a mandoline or very thin with a knife
- 1 pint grape tomatoes
- 1/3 cup olive oil
- 1/3 cup apple cider vinegar
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1/4 tsp Himalayan sea salt
Combine all ingredients in a bowl and mix well. Marinate covered in the refrigerator for at least an hour.
