  • 3 small zucchini (OR cucumber), sliced with a mandoline or very thin with a knife
  • 1 pint grape tomatoes
  • 1/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1/4 tsp Himalayan sea salt

Combine all ingredients in a bowl and mix well. Marinate covered in the refrigerator for at least an hour.
