Serves 4
- 1 1/2 lb. Grass Fed Pork Tenderloin (No hormone or antibiotic raised)
- 1 tbsp olive oil
- 1/4 cup water
- 1/4 cup apple cider vinegar
- 1/4 cup 100% apple juice concentrate
Sweet and Spicy Rub
- 1 tbsp Chipotle powder
- 1 tbsp ground coriander
- 2 tbsp garlic powder
- 3 tbsp onion powder
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tbsp ground black powder
- 6 tbsp brown sugar
- 2 tbsp chili powder
- 3 tbsp sea salt
- 1 tsp cinnamon
- 1 tbsp ground nutmeg
- 3 tbsp paprika
- 2 tbsp smoked paprika
- 1 tbsp ground ginger
* This will make more rub than you will probably need, store additional rub in glass container.
Mix together spices in a small bowl until well blended, set aside.
Preheat the oven to 220 degrees. Rub pork-loin with olive oil, coating well. Place pork-loin in 15″ oval roasting pan and coat with Sweet and Spicy rub, covering generously. Add water, apple juice, and apple vinegar to the roaster. Cook uncovered for 2 hours. Remove from oven set aside to cool, slice thinly and serve.
