- 1 lb. organic ground turkey
- 2 small spaghetti squash
- 15 oz. can diced tomatoes with basil, oregano, garlic
- 1 small can tomato sauce
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 pint mushrooms, sliced
- 1 tbsp oregano
- 1/2 tbsp garlic powder
- OPTIONAL: goat cheese crumbles
Preheat the oven 350 degrees. Slice squash in half lengthwise, spoon out the seeds, sprinkle with sea salt and garlic powder and place skin side up on a rimmed baking sheet. Bake for 25 minutes until tender to touch, remove from oven and scrape out insides with a fork, set aside.
Meanwhile, brown the turkey in a skillet over medium-high heat. Once browned, add all other ingredients and simmer for about 30 minutes.
Stuff each half of the squash with the turkey mixture and place back into the oven (with goat cheese crumbles on top if using) for 10 minutes. Remove and enjoy! One half is a serving.
