Serves 5, 4 rolls each

  • 2 straight cucumbers or zucchini, medium size
  • 1/2 cup red pepper hummus
  • 1/4 cup Feta cheese
  • *optional diced roasted red peppers

Slice cucumber or zucchini into long strips using vegetable peeler or mandoline. Spread small amount of hummus onto each cucumber or zucchini strip, sprinkle with feta cheese and diced peppers. Roll cucumber or zucchini into a tight roll and secure with a toothpick. Refrigerate for 30 minutes and serve.
