Yields 14 cookies


  • 1 cup raw almond butter
  • 1/2 cup pumpkin puree
  • 1/4 cup pure maple syrup
  • 3/4 cup dried apples, no sugar added, chopped
  • 1/4 cup dried cranberries, no sugar added
  • 1/4 cup unsweetened shredded coconut flakes
  • 1/4 cup coconut flour
  • 1/2 cup dark chocolate chips, optional, at least 60% cacao
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla extract
  • 1/4 tsp. sea salt

Preheat the oven to 350 degrees. Mix together the dried apples, dried cranberries, shredded coconut, coconut flour, pumpkin pie spice, sea salt, and chocolate chips, set aside. In another bowl, mix together the pumpkin puree, maple syrup, almond butter, and vanilla extract. Fold the dry ingredients into the wet until mixed well. Use a tablespoon scooper to place cookies onto parchment lined baking sheet, press down with a fork and bake for 10 minutes. Let cookies cool and store in the refrigerator.
