Ingredients, Yields 14 cups
- 15 oz can red kidney beans, rinsed and drained
- 15 oz can dark red kidney beans, rinsed and drained
- 15 oz can white kidney beans, rinsed and drained
- 28 oz can organic diced tomatoes
- 15 oz can pumpkin puree
- 10 oz can diced tomatoes and green chilies
- 1 lb grass fed beef, browned and drained
- 1 medium yellow onion, diced
- 1 medium yellow pepper, diced
- 1 tbsp minced garlic
- 1 tbsp chili powder
- 1 tbsp garlic powder
- 1 tbsp ground cumin
- 1 tbsp oregano
- 1 tsp ground onion
- 1 tsp cocoa powder
- 1 tsp pumpkin pie spice
- 1 cup water
Directions:
Brown the beef in a skillet over medium-high heat, drain and rinse. Add to crockpot with all other ingredients and cook on low for 8 hours. Serve with shredded cheese and a dollop of greek yogurt if desired.
