**this recipe is gluten and dairy free
Yields 6, 1 cup servings
Ingredients:
- 1 can pumpkin puree (not pumpkin pie filling!)
- 1/2 cup chia seeds
- 2 cups unsweetened vanilla almond milk
- 2 tsp. pure vanilla extract
- 1 tsp. pumpkin pie spice
- 1/4 cup raw honey
Combine all ingredients in a glass bowl, stir well to combine and refrigerate for at least 2 hours before serving. BONUS: One serving of this pudding has 9 GRAMS OF FIBER!!!
