Everyone loves a good green juice, but paying $12-$15 for one juice or investing in a juicer feels expensive, and intimidating to a lot of people. I’ve recently been making this green juice without a juicer; it’s way better than anything I’ve ever bought at a juice shop and I love that I can control the ingredients.

So, how do you make it? Here’s what you will need:

  • a high speed blender
  • a nut milk bag with no bleach or chemicals (click here for the ones I use)
  • 2 organic green apples, sliced
  • 1 lemon, peeled
  • 1 large cucumber, chopped
  • 3 stalks of celery, chopped
  • 3-4 cups organic baby spinach, roughly chopped
  • 1 inch fresh ginger root, peeled
  • 3 cups filtered water

INSTRUCTIONS: Roughly chop the vegetables, don’t worry too much about the size since it will all get blended. Add the spinach, cucumber, apple, lemon, celery, ginger and water to the blender. Place the lid on and blend on high speed until smooth, stopping to scrape down the sides or add more water if necessary. Over a large bowl, pour the juice into the nut milk bag and squeeze the liquid out into the bowl until you’re left with just the pulp inside the bag. You can save the pulp (see suggestions for use below). Pour the juice into mason jars or air-tight containers and store in the refrigerator for 24-48 hours.

Save the pulp! Here’s why, and what to do with it…

The pulp that you will end up with at the end is not useless, in fact, the pulp has a ton of the nutrients and most of the fiber. There are lots of creative ways to use it so it doesn’t go to waste.

  • compost it instead of throwing it away
  • mix it into a meatball or burger recipe
  • use it to make a sauce or spread, such as pesto
  • add it to smoothies
  • use it to make vegetable crackers
  • add to baked goods
  • stick it in the freezer for later use
