yields 4 servings, 1/2 cup each
- 2 ripe avocados
- 1/4 cup full-fat coconut milk
- 2 scoops plant-based chocolate protein (I use this Vega One brand)
- 1 tbsp of cocoa powder
- pinch of cinnamon
- optional toppings: unsweetened shredded coconut flakes, chopped nuts, sliced berries**, dark chocolate shavings**
Combine all ingredients in a blender or food processor until creamy. Refrigerate for 2+ hours. Serve with desired toppings.
** If consuming mousse for breakfast, it is best to omit berries and dark chocolate
