Yields 4 servings

  • 2 organic white peaches
  • 1/4 cup natural almond butter
  • 1/2 cup full fat coconut milk, canned BPA Free
  • 2 tbsp. unsweetened coconut flakes
  • 1/2 tsp. stevia extract
  • 1/2 tsp. ground cinnamon

Preheat oven to 375 degrees. Slice peaches in half and remove pits. Place in a small baking dish. Spread 1 tbsp almond butter inside each peach half. Sprinkle with cinnamon, stevia, and 1/2 tbsp of coconut flakes. Bake in the oven for 15 minutes. Remove baking dish from oven, pour coconut milk on top of peaches and place back in the oven, baking an additional 10-15 minutes. Serve immediately.
