Serves 1-2 (1 main dish, 2 side salads)


  • 1 cup organic baby spinach
  • 1 cup red-leaf lettuce, shredded
  • 2 slices uncured bacon, nitrate/nitrite free, cooked until crispy
  • 2 hard-boiled eggs
  • 1/4 cup cherry tomatoes
  • 1/2 an avocado, sliced
  • 1 oz. crumbled blue cheese
  • 2 oz grilled chicken *if desired
  • Avocado Dressing


Place spinach and red-leaf lettuce on a plate. Layer with tomato, egg, blue cheese, avocado slices, and crumbled bacon. Drizzle avocado sauce on as desired for the dressing and serve immediately. Recipe can easy be doubled, etc. to serve more. Add grilled chicken for an extra protein kick!
